You've had it at fancy restaurants, now make it at home

Show up and show out. Our baked spicy alla vodka pasta - creamy, crispy, saucy and rich, finished in the pizza oven for caramelised perfection that makes your guests think you worked way harder than you did.

Ingredients (Serves 4)

  • 1 jar Sorry Nonna Creamy Vodka
  • 400g chifferi pasta (or any short pasta you've got kicking around)
  • 1 tbsp olive oil
  • 1 small shallot, finely chopped
  • 2 cloves garlic, minced
  • 1/2 tsp chilli flakes (optional, if you like danger)
  • 1/2 cup grated parmesan (or pecorino)

Method

Cook the pasta

Cook your chifferi in salty water until just before al dente. Remember, it will keep cooking when baked.

Build the sauce

In a large pan, heat the olive oil over medium heat. Add the shallot and garlic and saute until fragrant and translucent. Stir in the Creamy Vodka sauce and chilli flakes. Let it simmer gently for 2-3 minutes until it is thick and glossy. That's it.

Bring it together

Add the pasta to the sauce and toss until it is all coated and cosy. Stir in half the parmesan.

Bake it

Pour the pasta into a baking dish, top with the remaining cheese, and slide it into a hot pizza oven (or an oven on maximum) for about 5-8 minutes, until the top is bubbling and crisp around the edges.
